Pumpkin Muffins
1 3/4 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup milk
3/4 cup canned pumpkin
1 teaspoon vanilla
5 tablespoons vegetable oil
1 egg beaten
Optional: 1/2 cup chopped nuts or raisins
Grease 12 muffin cups. Mix dry ingredients together. Mix milk, pumpkin, vanilla, oil and egg in separate bowl. Pour wet ingredients into dry ingredients and add nuts or raisins if using. Stir just until flour is moistened. Batter should be lumpy.
Fill muffin cups 2/3 full. Bake 18-20 minutes in a 400 degree F. oven. Remove from pan to rack to cool.
